Happy Wednesday to you! I’m getting ready for my first big trip in quite a long time. Tomorrow I’m headed to Austin, TX, for the annual Paleo f(x) conference.
The weather forecast looks to be pretty hot and humid and even thunderstorm-y, so I’ve been trying to get as much outdoor activity as possible these past few days with walking on the beach at home:
Started off this day with a smoothie using sprouts I got at the farmers’ market (broccoli on the left, onion on the right):
Only the broccoli ones made it into my breakfast smoothie, in case you were wondering, ha!
Followed this bad boy up with some tea (unpictured, I always forget)! BTW, this post is part of What I Ate Wednesdays, in case you didn’t guess that already.
After breakfast, the beach walk ensued. Shark alert! I didn’t see it but there’s some drone footage from last year’s sighting that actually didn’t get sighted by the surfers right next to it:
Lunchtime I made my version of a paleo-ish taco bowl with ground locally-raised turkey, veggies, a sprouted corn tortilla, avocado, and ketchup:
My afternoon snack attack was taken care of by my overflowing fruit basket and the first of the seasonal stone fruits:
I did a little baking of some homemade grain-free granola for my trip, too (chocolate-flavor on the left, regular on the right). You LMK if you want the recipe, ‘k?
I made this dinner bowl with steamed broccoli with lemon, sweet potato with ghee, locally-caught tuna, and some beans for good measure:
Plus, a handful of granola for dessert.
I’ll be taking the next week off from blogging, but if you want to see my perspective of the conference, feel free to follow me on the Insta (the event’s official hashtag is #PFX16). I’ll be blogging about it in a future post as well, and apparently there will be a livestream of the events too!
Otherwise, hope to see you next on June 2nd for our Healthy Blogger Book Club meeting.
P.S. I also have a Carrie on Living Amazon affiliate store where I list all of my favorite beauty items, kitchen devices, books, and other cool stuff that supports my lifestyle. Your purchase of any item on Amazon helps support my blog so thank you in advance. Note: there may be some affiliate links within this post.
