I haven’t done a What I Ate Wednesdays post in a few weeks, so that’s what I’m doing today. Annnnd, we’re starting with a green smoothie made with hemp milk, steamed kale, frozen fruit, topped with my latest find of raw hydroponic watercress:
I just used scissors to chop off the leaves from the soil, gave them a quick rinse in the sink, and then plopped them on top of the other smoothie ingredients (BTW, I have two Pinterest boards you might like – Paleo Smoothies and Vegan Green Smoothies):
I split this tasty concoction with my husband, whose birthday it happened to be, so then off we went for an adventure around town.
First, a b-day hike through the mustard grass:
Now that we’re well into Spring, the grasses are already starting to turn brown, especially when contrasted to the green hills from just a few weeks ago:
Next stop on our birthday adventure was the farmers’ market:
We got our veggies and eggs for the week, and then hit our veg cafe for some sustenance. I always get the spring rolls with quinoa and a cashew-based dipping sauce:
On the way home, we stopped at the health food store for just a few more necessary items (if you’re on Insta, check out my description of each item):
Dinner was another new-to-me dish: savory oats! When you’re needing some healthy carbs but you don’t want a breakfast-ey dish, this. is. the bomb (seen here made with gluten-free, high protein oats, onions, chickpeas, and herbs, served with roasted brussels sprouts):
Dessert shared between the birthday boy and me: a gluten-free, vegan chocolate mini-cake made by a local baker:
